For this recipe you will need:

  • 200g cooked red lentils
  • 2 tablespoons of ground coriander
  • 2 cloves garlic, crushed
  • 1 teaspoon of ground cumin
  • 1 teaspoon of ground nutmeg
  • 2 tablespoons of smoked paprika
  • 3 tablespoons of plain flour
  • 2 tablespoons of vegan mayonnaise
  • 1 tablespoon of Dijon mustard
  • 4 eggs
  • 200g panko breadcrumbs
  • 200ml of vegetable oil for frying
  • Sea salt and freshly ground black pepper

To make your vegetarian scotch eggs:

  1. In a large bowl mash the cooked red lentils, coriander, garlic, cumin, nutmeg and smoked paprika together until combined
  2. Add the flour, mayonnaise and mustard to the lentil mixture and stir to combine
  3. Beat one of the eggs in a separate bowl and add to the lentil mixture, stirring to combine
  4. Divide the lentil mixture into 4 equal portions, taking one portion at a time, shape it around one of the remaining eggs
  5. Roll the egg around in the beaten egg, shaking off any excess, and then roll it in the panko breadcrumbs, making sure it is completely coated. You can do this with the other 3 eggs too.
  6. Heat the vegetable oil in a large pan, when it’s hot add the scotch eggs and fry for 5 minutes, turning regularly until golden and crispy.
  7. Drain the scotch eggs on kitchen paper and season with sea salt and freshly ground black pepper before serving.
