Instructions:

  1. Preheat the oven to 350°F. Grease an 8-inch springform pan with butter.
  2. In a food processor fitted with a steel blade, process the Oreo cookies until they are broken down into crumbs. Add the melted butter and sugar, and process until the crumbs are well coated. Press the crumbs firmly into the prepared pan.
  3. Bake the crust for 8 minutes. Remove from the oven and cool completely.
  4. In a medium bowl, whisk together the cocoa powder and heavy cream until smooth. Set aside.
  5. In a heatproof bowl set over a pot of simmering water, combine the dark chocolate and 2 tablespoons of sugar. Heat until the chocolate is melted and smooth. Remove from the heat and let cool slightly.
  6. In a small bowl, mix the cold water and gelatin together. Let stand for 5 minutes.
  7. In the bowl of a stand mixer, beat the 2 cups of heavy cream with the powdered sugar, vanilla extract, and melted chocolate until soft peaks form. Add the gelatin mixture and mix until it’s just combined. Gently fold the cocoa powder mixture into the whipped cream until it’s just combined.
  8. Pour the mousse over the cooled crust and spread it evenly. Sprinkle with the dark chocolate chips. Refrigerate for at least 4 hours or overnight.
