Divide dough in half and shape each into ball. Flatten each ball into disc. Wrap each in plastic wrap; refrigerate at least 1 hour. (Can be made 1 day ahead. Keep refrigerated.)

Roll out each disc of dough between 2 sheets of waxed paper to 1/4-inch thickness. Using gingerbread people-shaped cookie cutters, cut out cookies. Transfer cookies to baking sheets, spacing 1 inch apart. Bake until edges are golden, about 12 minutes. Transfer to rack; cool.

  • 3 large egg whites
  • 4½ cups (about 1 pound) 10X confectioners’ sugar

In the bowl of an electric mixer, beat the egg whites until foamy. With the mixer running, gradually add the confectioners’ sugar, 1 cup at a time, until the mixture is glossy. Add the lemon juice and beat on medium-high speed for 5 minutes, until thick and spreadable. If you are using food coloring, add it now and beat until blended. The icing can be used to pipe designs on the cookies, or if you want to use it to “glue” two or more pieces together. You can also spread it over the cookie like frosting.
