  • 3 cups heavy cream
  • 1 cup milk (whole or 2%)
  • 6 egg yolks
  • 1/2 cup granulated sugar
  • pinch of salt
  • 1 vanilla bean, scraped for inside

Instructions

  1. Combine the milk and cream in a medium-sized saucepan.
  2. Split the vanilla bean lengthwise and scrape the inside, reserving the inside of the bean. Place the bean in the saucepan with the milk and cream.
  3. Over low-medium heat, heat the milk and cream until it starts to steam (do not let it boil!) and remove it from heat.
  4. Meanwhile, in a medium bowl, whisk together the egg yolks, sugar, and salt until the mixture is pale yellow.
  5. Gradually whisk 1 cup of the warm milk mixture into the egg mixture. Once combined, add the egg mixture back into the saucepan and cook over low-medium heat while stirring constantly.
  6. Continue to whisk the mixture until it thickens (should be thick enough to coat the back of a spoon).
  7. Strain the mixture through a fine mesh strainer into a container. Stir the mixture occasionally until it cools to room temperature.
  8. Stir in the reserved vanilla bean seeds, cover the container, and refrigerate for at least 3 hours.
  9. Once chilled, churn the ice cream according to the instructions of your ice cream maker.
  10. Serve the vanilla ice cream immediately, or transfer it to a container with a lid and harden in the freezer.
