For the Crockpot chicken:
1 lb. boneless, skinless chicken breasts
3 cloves garlic, minced
1/2 teaspoon each onion powder and chili powder
1/4 teaspoon each garlic powder and cumin
1/2 teaspoon salt
1/4 teaspoon black pepper
For the nachos:
2 tablespoons olive oil
1/2 large onion, diced
7 ounces baby spinach
1 can (14.5 ounces) black beans, drained and rinsed
2 cups pre-shredded mexican cheese
1/2 cup salsa
2 cups tortilla chips
additions of your choice: diced jalapeno, cilantro, diced tomatoes, avocado, sour cream
1. Place the chicken breasts in a slow cooker and season with garlic powder, chili powder, cumin, onion powder, salt and pepper. Add 1/4 cup of water and cover. Cook on low for 6-8 hours. Once cooked, shred the chicken with two forks in the slow cooker.
2. Preheat the oven to 350ºF (180ºC).
3. Heat the oil in a large skillet over medium-high heat. Add the onion and cook for 3-4 minutes. Add the spinach and cook until wilted, about 1 minute. Add the beans and cook for 1 minute.
4. Spread the chips evenly over a large baking sheet. Top with the chicken, onion and spinach mixture, followed by the cheese and salsa. Bake for 10-12 minutes, until the cheese is melted and bubbly.
5. Serve hot, with desired additions and additional salsa or guacamole on the side.
