- Brush the dough with oil and sprinkle evenly with the scallions and salt. Starting with a short end, roll the dough up tightly like a jelly roll. Coil the roll like a snail, tucking the end underneath. Flatten gently with your palm then re-roll into a flat pancake, again about 8 inches in diameter.
- Repeat with the remaining dough.
- In a large saute pan over medium heat, add 2 tablespoons of the peanut oil. When the oil shimmers, carefully place the pancake in the pan and cook until golden brown and crispy, about 2 to 3 minutes per side. Cool slightly on a wire rack then place on the baking sheet in the warm oven while making the remaining pancakes. Slice into wedges and serve with dipping sauce.
