- 1/4 tsp tannin
- 1/2 tsp pectic enzyme
- 1 package of wine yeast
To begin, wash and peel the ginger root, then chop it into very small pieces or shavings. Boil two gallons of water, add the chopped ginger and boil it for 10 minutes. Remove the pot from heat, add the brown sugar and stir until it is fully dissolved. Then add the acid blend, campden tablet, yeast nutrient, tannin, pectic enzyme and mix these into the sugary liquid.
Next, you will need to cool the liquid down until it reaches lukewarm temperature. Once the liquid is cool, pour it into a clean carboy. Use a strainer to strain out the ginger pieces. Put the carboy in a spot that is between 70 and 75 degrees Fahrenheit, then add the wine yeast package. Insert an airlock filled with water onto the carboy and allow it to ferment for around a week or until the bubbling stops.
Homemade Ginger Wine
Once the fermentation process is complete, you will need to rack the wine, which means to transfer it into another carboy. Fill the carboy up to the neck and attach an airlock filled with water. Put the carboy in a cool spot (60 Fahrenheit and below) and let the wine age for two or three months.
After two or three months of aging, you can rack the wine into a clean carboy and stabilize the wine by adding campden tablets, potassium sorbate, and sorbistat. Prevent the wine from becoming too sweet by making sure the specific gravity readings are aroung 0.995. Wait an additional month after stabilizing and then rack it into another clean carboy for clarity and taste.
Finally, wait another five months before bottling and serving. Once you have cleared, filtered and bottled the wine, you can enjoy your homemade ginger wine. Even if you don’t have tons of time and experience making wines, you can still make your own delicious ginger wine at home!
