1. In a large skillet or dutch oven, heat some oil over medium-high heat. Brown the chicken thighs on each side for about 1 minute before removing from the pan.
2. Reduce the heat to medium and add in the garlic, bell pepper, and onion. Sauté the vegetables, stirring regularly, for about 5 minutes or until the onion has softened.
3. Add the uncooked rice to the vegetables and cook, stirring, for another 3-4 minutes, or until the rice is lightly toasted.
4. Add the diced tomatoes, tomato paste, Worcestershire sauce, smoked paprika, oregano, garlic powder, and black pepper. Stir to combine and add enough chicken broth to cover the ingredients. Increase the heat to medium-high and bring mixture to a boil. Reduce heat to low, cover the pan, and simmer for 20 minutes, or until the rice is completely cooked and all of the liquid has been absorbed.
5. Remove from heat, fluff with a fork, and adjust salt to taste. Garnish with freshly chopped parsley, if desired. Enjoy!
