• 2 cups half-and-half
• 1 cup granulated sugar
• 5 large egg yolks
• 2 tablespoons chai tea leaves
• 1.5 teaspoons ground cardamom

• 1 teaspoon ground allspice
• ⅛ teaspoon ground cloves
• ¼ teaspoon ground black pepper
• 2 cups heavy cream
• ¼ teaspoon cracked black pepper flakes, for garnish
• 1 teaspoon ground cinnamon, for garnish

Instructions

1. Pour the half and half into a medium saucepan and add the granulated sugar to it. Whisk together over medium heat until the sugar is dissolved and the milk is steaming and hot but not boiling. Remove from the heat.

2. In a medium bowl, whisk together the egg yolks. Slowly and steadily, pour the heated half and half into the egg yolks while whisking. Once fully combined, pour back into the saucepan.

3. Add the chai tea leaves, ground cardamom, ground ginger, ground nutmeg, ground allspice, ground cloves, and ground black pepper to the half and half. Heat over medium-low until it reaches a slow boil. Reduce the heat and continue to stir for 10-12 minutes or until the mixture thickens and mildly coats the back of a spoon, stirring often. Strain the mixture through a sieve.

4. Add the heavy cream and cracked black pepper flakes and whisk until fully combined. Place into the refrigerator to chill completely, at least 6 hours.

5. When ready to churn the ice cream, place the bowl of an ice cream maker into the freezer for 24 hours. Once chilled, add the cooled mixture to the ice cream maker and churn as per manufacturer’s instructions until ready.

6. Place the finished ice cream into a bowl, cover lightly, and freeze until ready to serve. Sprinkle with ground cinnamon and enjoy!
