  3. Spread Dijon mustard on the other side of each piece of bread.
  4. Place one slice of bread, mustard side down, on a baking sheet.
  5. Mix honey mustard, chicken, red onion, lemon juice, and capers together in a bowl.
  6. Spread the mixture onto the bread slice on the baking sheet.
  7. Sprinkle feta cheese over the mixture.
  8. Add salt and pepper, to taste.
  9. Place the other slice of bread over the mixture, mayonnaise side down.
  10. Bake for 10 – 12 minutes, or until cheese is melted and bread is golden brown.

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 1/3 cup all-purpose flour
  • 1/4 cup olive oil
