1 pint (2 cups) heavy cream
1 cup whole milk
2/3 cup sugar
1/2 teaspoon kosher salt
6 large egg yolks
3 tablespoons chopped basil leaves

Instructions

  1. In a medium saucepan, combine the cream, milk, sugar and salt. Bring to a simmer over medium heat, stirring often. Do not let the mixture boil.
  2. In a medium heat-proof bowl, whisk together the egg yolks. Slowly whisk in the hot cream mixture, a few tablespoons at a time. Once all the cream is added, pour the mixture back into the saucepan and cook over medium-low heat, stirring constantly with a wooden spoon, until the custard is thick enough to coat the back of the spoon, about 8 minutes. Do not boil or the custard will curdle.
  3. Strain the custard through a fine-mesh sieve into a heat-proof bowl. Stir in the chopped basil. Pop the bowl into an ice bath to cool it down quickly (half water, half ice). Once cool, cover and refrigerate for at least 4 hours or, ideally, overnight.
  4. When ready to churn the custard, remove the bowl from the refrigerator and give it a few stirs. Churn the custard in an ice cream maker according to the manufacturer’s instructions. Transfer the ice cream to an airtight container and freeze for at least 4 hours before serving.
