I recently tried some new recipes and I have to share them with everyone! The first one is for Challah Bread. This bread is perfect for a Sunday brunch or just as a snack with your favorite toppings. Check it out:

Challah Bread

ALL RECIPES FRENCH VEGETABLE LOAF

Ingredients:

  • 4 1/2 cups all-purpose flour
  • 1/4 cup white sugar
  • 2 teaspoons salt
  • 1/2 cup vegetable oil
  • 1 cup warm water
  • 2 tablespoons active dry yeast
  • 3 eggs, beaten

Instructions:

  1. In a large bowl, mix together flour, sugar, and salt.
  2. In another bowl, mix together warm water and yeast. Let sit for 10 minutes.
  3. Add yeast mixture to the flour mixture and mix well.
  4. Add beaten eggs and vegetable oil to the mixture and mix well. The dough should be soft and slightly sticky.
  5. Knead the dough on a lightly floured surface for about 10 minutes until smooth.
  6. Place the dough in a greased bowl and cover with a damp towel.
  7. Let the dough rise for about an hour until it has doubled in size.
  8. Punch the dough down and then shape into a braid or a circle shape.
  9. Place the dough on a greased baking sheet
  10. Bake at 350°F for 30-40 minutes, or until golden brown.

This Challah Bread is so delicious and smells amazing when it comes out of the oven. I love eating mine with butter and honey, but you can also enjoy it with jam or cream cheese.

The second recipe I tried was a Quick Vegetable Curry. I love this recipe because it’s both healthy and full of flavor. Check it out:

Quick Vegetable Curry Recipe

Ingredients:

  • 2 tablespoons vegetable oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon turmeric powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon cayenne pepper
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 2 cups frozen mixed vegetables
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1/2 cup coconut milk

Instructions:

  1. Heat oil in a large skillet over medium heat.
  2. Add onion and garlic, cook until soft and translucent.
  3. Add curry powder, cumin, coriander, turmeric, smoked paprika, salt, and cayenne pepper to the skillet.
  4. Stir in diced tomatoes, frozen mixed vegetables, and chickpeas.
  5. Let simmer for 10-15 minutes or until vegetables are tender.
  6. Stir in coconut milk and let simmer for another 5 minutes.

This Quick Vegetable Curry is perfect for a healthy weeknight dinner. You can enjoy it with rice or naan bread. I also love adding some raisins or cashews for a bit of added sweetness and crunch.
